The goals of the Academy are
summarized in some detailed, strict regulations written
down at the very beginning of the Academy’s activity; it
aims at reinforcing the members’ professional profile and
developing high-quality ice cream – especially insofar as
traditional ice cream production is concerned – gathering
together the best Italian producers, supporting their work
and finding out the best means to improve the production
process, the quality of the rough materials used and, as a
direct consequence, the quality of the products used in
one’s labs. In one word, we work to keep up the reputation
of Italian high-quality handmade ice cream, and to sell
high-quality-ice cream in the members’ shops, through the
use of high- quality products, the nutritive value of which
is undoubtedly high.
